Are we the only ones craving for smoothies all day? Since the start of the summer, we’ve been whipping up smoothies with a variety of fruits that are available in our local markets. One of our favorite recipes is the blueberry coconut smoothie. This fast and healthy recipe makes for a great breakfast or snack (no judgements here) that is packed with protein and antioxidants.
Here’s our simple and healthy recipe that’s the most refreshing on a hot summer day!
1 cup of blueberries
1/2 cup of bananas
3 tbsp coconut yogurt
1 cup of your choice of milk
a dash of nutmeg
1/3 cup of ice (optional)
1. Prepare the fruits and freeze for a few hours
2. In a blender, combine all ingredients and blend until smooth
3. Transfer to a cup and garnish with coconut flakes and mint leaves
You can add power ingredients such as chia seeds, flax seeds, kale and protein powder
If you do not have coconut yogurt, you can use plain greek yogurt and coconut milk.
Frozen bananas make the smoothie sweeter and creamier without overpowering other flavors.
